Southern Deer Chili Recipe. For a smoky background, we use a mixture of smoked paprika and diced chipotle pepper in adobo sauce. Add tomatoes, tomato paste, kidney beans, chili powder, cayenne pepper, crab boil and salt and garlic salt.
Add garlic and cook 1 minute longer. Add spices, tomatoes, beef broth and dark beer. Heat oil in a dutch oven or large pot and add venison, onions, and peppers.
Add beef, and cook, stirring often, 6 minutes or until meat crumbles and is no longer pink.
Melt the butter in a large pot over medium heat. Add spices to mixture and transfer to slow cooker or crock pot, and mix in remaining ingredients. Add the chopped chiles, red bell peppers, jalapeño peppers and onions. Cover and simmer on low for about 30 minutes, stirring occasionally.
